The length of sapping days contributes to the success of the production season, and in 2010 the number of days decreased to 23 days from the 28 days in 2009.  Sapping days are weather-dependent, and 2010 brought too many warm nights for optimal sapping of the maple trees.  The earlier start to the season and the fewer number of cold nights also contributed to the sugar content of the sap being less than in previous years.  The sugar content of the sap directly corresponds to how much sap is needed to produce syrup.  In 2008, 39 gallons of sap were required to produce one gallon of syrup.  In 2009, that number went up to 43, but was then surpassed in 2010 with 48 gallons of sap being needed for each gallon of syrup.

The New England states reported 81 percent unfavorable “too warm” conditions during the sapping season, combined with 16 percent “favorable” and 3 percent “unfavorable too cold.”  The early season caught many production houses off-guard, and the unfavorable temperatures and shortened number of sapping days proved to have a negative effect overall.  The hope for 2011 is an anticipated early start; warming days combined with continued cold nights, and no early heat trends.  These conditions will produce a great overall season for all.
